It’s officially fall and we have been getting accustomed to our crazy new schedule on which we juggle school, homework and activities. My days have not been anything like the lazy days of summer and I have to admit, I’ve been struggling with this transition, especially when it comes to meal prep.
As much as I love to cook, I’m not feeling as inspired with my daily meal planning. It’s important for me to get a full and balanced healthy meal on the table every night but that requires two key elements, work and time. There are a few easy meals on our regular weeknight rotation that everyone in the family enjoys, and frankly we’re all sick of them. How many times can we eat mac ‘n’ cheese and tenders? It gets boring, and I want to get away from acting as a short order cook. Instead, I’m interested in making one meal for everyone.
Years ago when I first tried Barber Foods Stuffed Chicken Breasts, I thought they were so delicious. After hearing that the recipe had been improved upon, I couldn’t imagine how. They were already so great, how can they be made even better? I was off to my local Shop Rite to seek out the new chicken, and I found the new recipe in the pretty new packaging over in the frozen foods department.
My store only carries the bulk package, but the regular package contains two chicken breasts. The chicken cordon bleu variety is my favorite, so I picked up an entire box containing six of them.
Barber Foods Stuffed Chicken Breasts are packaged raw, so you must make sure that you follow the baking instructions and cook until the internal temperature reaches 165° F.
I had high hopes that my kids would love these as much as I had. They both eat chicken, ham and cheese, but I wondered what they’d think about all three in one bite? Luckily they were a hit, and the recipe is even more delicious than I remember.
