Vegetarian Chorizo Potato Hash #MeatlessMonday

My go-to breakfast at the local diner is this delicious chorizo skillet. I love love love chorizo, but I am aware that it’s not so healthy, so when I saw that Walmart carried Vegetarian Chorizo Crumbles I knew just what I was making at home for breakfast, Vegetarian Chorizo Potato Hash. But was it as tasty as my favorite breakfast? I had my doubts. Chorizo has a very specific flavor and I wasn’t sure this veggie version would satisfy my craving for meat but I do love other MorningStar Farms products so I had to give it a try.

Couldn’t have chosen a better day for Walmart Grocery Pickup. This is a simple recipe with only four ingredients if you include the egg. It goes together quickly making it an excellent option for even weekday mornings. First you must pierce and nuke your potatoes. I prefer Russet potatoes for this recipe, and I don’t even peel them. The skins contain the most nutrients and besides, I love them!

Vegetarian Chorizo Potato Hash

Five minutes in the microwave does it, and the potatoes are ready to be diced and set aside. Chop a small onion and sauté in a skillet with before adding the potatoes. Chop a few pats of butter and distribute around the skillet. Stir well and add the chorizo crumbles. By the way, these crumbles contain no artificial colors or flavors!

The chorizo crumbles completely transformed the potatoes and gave them so much color and flavor.

Top with fried or scrambled eggs and you have yourself a delicious healthy meal, whether you’re vegetarian or simple want to eat healthier.

Serves: 2
Ingredients
  • 2 large Russet potatoes
  • 1 small onion, chopped
  • ¾ cup MorningStar Farms® Chorizo Crumbles
  • Eggs if desired
  • 4 pats butter
  • Salt and pepper to taste
Instructions
  1. Clean and pierce potatoes.
  2. Cook in microwave on high for five minutes.
  3. Dice potatoes and set aside.
  4. Sauté onion in skillet.
  5. Add diced potatoes and pats of butter and mix well over medium heat.
  6. Add chorizo crumbles, stirring well until heated through.
  7. Season with salt and pepper.
  8. Serve as is or top with eggs.

    I think I would prefer this vegetarian chorizo to the real deal. As you mentioned, chorizo isn’t that healthy to eat!
