Almost every morning I make a green smoothie for breakfast. They provide all of the wonderful nutrients to your body and it’s a great way to get in those recommended servings of fruits and vegetables. Sometimes, it’s the ONLY way I can get my kids to eat their veggies. Tip: If your kids won’t eat or drink anything green, serve it up in a solid tumbler.
This smoothie is as healthy as it delicious. I finally planted my herbs for the season including fresh mint which makes my drinks and smoothies so refreshing. I really feel like it takes this smoothie to the next level.
Using my Vitamix, I blend a three-green blend of baby kale, chard and spinach that I buy from my local Costco. You can use any type of leafy green for this recipe. And if you like a more frozen drink like I do, use fruit that has been frozen beforehand. That way, there’s no need to add ice. I hope you enjoy this smoothie as much as we do!
- 1 cup pineapple, fresh or frozen
- 1 cup three green salad mix (or your favorite)
- 1 tablespoon fresh mint leaves
- ½ tablespoon flax seeds
- 1 cup coconut water.
- Add ingredients to blender and mix well.
- Pour into a glass or tumbler.
- Garnish with a sprig of mint and a slice of pineapple.
