One of my favorite sides is Green Bean Almondine. Usually I use fresh green beans, but this looks like a great recipe to try.
Green Bean Almondine with Tomatoes
4 Small shallots, diced
2 Large tomatoes, diced
2 tbsp Parsley
2 tsp Lemon Juice
1⁄4 tsp salt
1⁄4 tsp Pepper
1⁄4 c Slivered almonds
1 cn Libby’s® Jumbo-Can™ Cut Green Beans (28 oz), drained
5 pk Small shallots, diced (5)
Melt butter in frying pan and add shallots; sauté over medium-low heat until soft. Add tomatoes, parsley, lemon juice, salt, pepper and green beans. Mix well and cook until heated through, approximately 2 minutes. Place mixture in service dish and top with almonds.
