Sweet Kale, Vegetable and Goat Cheese Salad {Prize Pack Giveaway}

Whether I’m eating one as an appetizer before dinner, or as a complete meal at lunch, I have learned to love salads. They are both good for you and can be very delicious. What could possibly be better than that? Well, I’ll tell you. The best salads are the ones that are made for me, when I don’t have to clean and chop all of the ingredients for that perfect balance of taste and color. Wouldn’t you agree? I think I’d eat much more salad if they were readily available. Eat Smart has taken the work out of salads, so that you can enjoy a delicious blend with very little effort.

For lunch today I had one of Eat Smart’s Gourmet Salads for lunch. The Kale Salad kit was loaded with fresh and nutritious greens and add-ins, including kale, broccoli, brussels sprouts, cabbage, chicory, dried cranberries, roasted pumpkin seeds and poppyseed dressing.  There really isn’t a need to add anything if you want a vegan salad, but I did decide to add goat cheese.

It was the most delicious salad I’ve had in a long time. The veggies were super fresh and crunchy and even with the dressing – which was awesome by the way – it fits into my low calorie meal plan and aligns with my weight loss goals. Eat Smart also makes delicious stir fry kits. We enjoyed one the other night and it was super easy to make; all we needed to add was the chicken and I had dinner on the table in 15 minutes. Can’t be that on a busy weekday.
