Whenever I shop at Costco I look for the Eat Smart Kale salad kit. It is filled will super foods and packaged with protein, and is insanely delicious but most of all what I love is that it’s easy. More often than not, I reach for an unhealthy meal rather than taking the time to chop and put together a nice salad. Eat Smart does it for me, and who wouldn’t love a salad practically made for them?
I was in for a treat when I was sent some of the other Eat Smart kits, including some individual kits which are a perfect salad for one; I have also split the salad between my husband and I and used the salad as a side because on it’s own these are a full meal. The 6 to 7 ounce single serving kits cost about $5 depending on purchase location.
If you’re not familiar with Eat Smart salads, they comes with all of the add-ins individually wrapped so that you can decided how you’d like your salad. With this kit above, I decided to skip the chia seeds, and it’s great to have that option.
I couldn’t wait to try the new Eat Smart Southwest Vegetable Salad Kit. Tex Mex is one of my favorite cuisines, so this variety really peaked my interest. It contains a powerful blend of five superfoods that include savoy cabbage, red cabbage, radishes, carrots and kale paired with a chipotle dressing and cheddar cheese.
There wasn’t anything included that we didn’t want, so we mixed in all of the ingredients and then the dressing and salad was done. This chef inspired salad will wow your guests, offering a sophisticated blend of five superfoods and delicious fixings including cheddar cheese, tortilla chips, crunchy corn and chipotle ranch dressing.
The large 10 ounce package is enough for a family with a good appetite. We had my parents over last night so we shared this salad over dinner and it was a hit!

I usually take a salad with me to have for lunch at work. It is time consuming to chop those veggies and make a dressing. I think I will give EatSmart a try, for those days that I have to rush out in a jif.
