Saturday is National Strawberry Shortcake Day. As if we needed a day to enjoy this fabulous dessert.
“Modern Family” actress Aubrey Anderson-Emmons (who plays Lily) is a huge fan of Strawberry Shortcake – the adorable program that I grew up loving too and has recently made a big comeback. So on her birthday, Aubrey was presented with her very own custom strawberry-shortcake cake for her 7th birthday by “Cutthroat Kitchen”-winning Chef Sandra Cordero. To help dessert lovers and Strawberry Shortcake fans mark the occasion with their own version of Aubrey’s cake, AG Properties, the intellectual property and outbound licensing division of American Greetings Corporation, has allowed me to pass along this amazing recipe.
Me and my favorite 5-year-old daughter made this recipe together. It took quite a bit of time with lots of steps but it was much easier than I expected and it was so delicious!
- 12 tbsp unsalted butter room temperature
- 2 cups sugar
- 4 large eggs
- 3/4 cup greek yogurt
- 1 tbsp lime zest grated
- 1 tsp almond extract
- 2 cups cake flour
- 1/2 tsp salt
- 1 tsp baking soda
- 1 tsp baking powder
- 1 1/2 cups heavy cream
- 3 tbsp sugar
- 1 1/2 tsp rose water
- 2 pints fresh strawberries
- 2 small limes juiced
- 2 tbsp sugar
- Preheat oven to 350 degrees F.
- Butter and flour the bottoms of two 8-inch cake pans
- In a mixing bowl, sift the cake flour, salt, baking soda and powderand mix well.
- Cream the butter and sugar with an electric mixer on low speed until light and fluffy. Add the eggs, one at a time, on medium speed, followed by yogurt, lime zest and almond extract. Slowly add the flour mixture until incorporated.
- Pour the batter evenly into the pans, smooth the tops, and bake in the center of the oven for 40 minutes, until a toothpick inserted in the center comes out clean.
- Let the cake cool in the pans for 30 minutes, then remove to wire racks and let cool to room temperature.
- In a small saucepan add half of strawberries, lime juice, and sugar and cook for 5 to 10 minutes until strawberries break down and the liquid becomes syrupy. Cool.
- Wash and cut the remaining strawberries in quarters.
- Whip the heavy cream in a mixer fitted with the whisk attachment until soft peaks start to form. Add sugar and rose water and mix until firm.
- Place one of the cakes on a serving platter, spread with the cooked strawberries and syrup. Then spread half of the whipped cream and scatter with fresh strawberries. Cover with the top layer cake and spread with the remaining cream. Decorate with strawberries.
Let the cakes cool completely - otherwise the cream will melt as seen in my photos.
Strawberry Shortcake debuted in 1980 as a line of social expressions products, as well as toys, videos, games, crafts and books. The character quickly catapulted from being a little girl with a mop of red hair into an overnight success. Today, the little girl with the big personality is winning the hearts of a third generation of consumers.
