Oatmeal Cookie Crusted Apple Crumb Pie – OATrageous Oatmeals

I had been wanting to get more heart-healthy oats in my diet when I received information about a recipe booked called OATrageous Oatmeals. The health scare I had this entire summer got me thinking about my health and how eating the right foods can dramatically affect your health.

Of course I already had so many different types of oats in my pantry. It’s easy to buy the right ingredients. The key is to make that healthy choice. Oatmeal Cookie Crusted Apple Crumb Pie does not is not necessarily the healthiest thing you can eat, but it actually really is. So you can enjoy this one without a heaping serving of guilt. And no one would ever know because it looks, smells and tastes so darn tasty.

Oatmeal Cookie Crusted Apple Crumb Pie – OATrageous Oatmeals

You can use the type of apple that you prefer for this recipe, but I used Ginger Gold apples – five small ones.

OATrageous Oatmeals is a fantastic recipe book filled with beautiful photography and a great variety of recipes. I was surprised to see soups, pudding, tea, and even home remedies and dog treats! If you need a bit of encouraging when it comes to eating your oats like me then I would highly recommend this book!

Oatmeal Cookie Crusted Apple Crumb Pie - OATrageous Oatmeals

This pie has a homey oatmeal cookie crust and is filled with juicy spiced apples. Topped with a pecan crumb, the pie is dressed up in a tart pan, making it appropriate for both a fancy dinner party and a simple weeknight meal.

Ingredients
Crust
  • 2 cups rolled oats
  • ¼ cup coconut oil
  • ¼ cup non-dairy milk we used vanilla almond milk
  • 2 tbsp ground flaxseed mixed with 4 tbsp water
  • 2 tbsp coconut sugar or brown sugar
  • ½ tsp cinnamon
  • 1 pinch salt
Filling
  • 3 cups peeled and chopped apples
  • 1 tbsp lemon juice
  • 3 tbsp cocunut sugar or brown sugar
  • 1½ tsp cinnamon
  • ½ tsp allspice
  • ⅛ tsp ground cloves
Instructions
  1. Preheat the oven to 350 degrees and spray an 8" tart or springform pan with oil. Set aside for later.
  2. Toast the oats in a dry nonstick skillet on medium heat. Keep stirring so that they do not burn. The oats are done when fragrant; about 3-5 minutes.
  3. Add all of the crust ingredients into a food processor and pulse until it starts to come together and form a ball, stopping and scraping the bowl if needed.
  4. Take ⅔ of the mixture out and press into tart pan. Leave ⅓ in the processor and set aside for the topping.
  5. Mix all filling ingredients together and then pour onto prepared crust.
  6. Add the pecans to the food processor with the remaining ⅓ of the oat mixture and process until pecans are tiny. Crumble the mixture onto the pie and bake for 30-40 minutes, until the crust sets up and he top browns.
  7. Cool completely before removing the pie from the pan and serve.

Per serving: Calories 215.5, protein 3.3 g, total fat 11.7 g, carbohydrates 22.2 g, sodium 7.9 mg, fiber 2.9 g.

    That misto is my favorite by the way. I got it for a wedding gift, and I just LOVE it! I am leaving this again, I don’t think it went through the first time.
