Brownie “Ice Cream” Sandwiches
Simple brownies become gourmet with just a spoonful of buttercream frosting sandwiched in between. Dip in sprinkles of any color to coordinate the party theme.

Instructions
  1. Preheat the oven to 550 degrees.
  2. Lightly oil pan with spray.
  3. Make the brownie batter according to the package. Spread the batter in prepared pan and bake for 15 to 18 minutes, or until a toothpick comes out clean. Remove the pan for the oven and place on a wire cooling rack. Let cool completely.
  4. Cut the brownies into 24 rectangular pieces.
  5. Pipe the frosting onto half of the brownies.
  6. Place the rainbow sprinkles on a plate. Dip the sides of each brownie sandwich into the sprinkles so that they stick to the frosting.
