If you follow me on instagram or if you know me in real life, you know that I drink a lot of smoothies. They’re a great way to make sure I get all of my daily fruits and veggies in, and they’re also quick and delicious. But I’ve gotten into a bit of a smoothie rut. I tend to make the same combo over and over: greens, carrots, strawberries and banana. It’s getting old.
I noticed everyone else in my house suddenly losing interest in my smoothies as well, so I guess I wasn’t the only one feeling this way. Thanks to my latest discovery, 365 Vegan Smoothies, I tried something different. Pink grapefruit and walnuts? I would never have thought to combine the two. You might be raising your eyebrows at me; I had my doubts too.
This smoothie is absolutely amazing! It looks just like a white russian, but it certainly doesn’t taste like one. It’s tangy and creamy all at the same time. So if you like grapefruit, give this one a try.

- 1¼ cups grapefruit juice (or a whole grapefruit peeled plus ¼ cup water)
- ¼ cup walnuts raw
- 1 whole banana frozen
- 1 teaspoon maple syrup
- ½ cup coconut water
- 1½ cups ice cubes
- Combine all the ingredients in a blender and blend from low to high until frosty smooth.
