Panko and Parmesan Crusted Flounder

We’re about half-way through Lent. In years past no meat on Fridays meant it was pizza night. Doesn’t exactly feel like sacrificing because I love pizza. But I’m trying to stay focused and eat healthy this year so I have been making my own meatless meals.

I was sent to Save-a-Lot to pick up some ingredients in honor of Meatless March. Last Sunday I brought the whole family to do the shopping. The store offers a little but of everything, from produce to ice cream and everything in between. If you’ve never been it is basically a mini supermarket but the prices are much less.

My goal during this shopping trip was to find some quality seafood. I avoid farmed seafood so when I saw these Port Side® wild caught flounder filets, I grabbed them right away. Flounder is one of my favorite fish for its delicate flaky texture. It is a versatile fish too that can be prepared in many different ways.

Panko and Parmesan Crusted Flounder

The kids were going a bit wild and wanted to buy just about everything in the store. Then they took a few moments to practice their dance moves. I was thankful that it wasn’t very crowded at the time.

This recipe is super easy to make using just a few staples. I found that broiling the fish toward the end of the cooking time gave me that crunch texture I was going for without having to fry the fish. I love when I manage to create something tasty and healthy.

Oven baked flounder breaded with panko bread crumbs and parmesan

Ingredients
  • 4 flounder filets
  • 1 cup panko bread crumbs
  • ½ cup parmesan cheese
  • ¼ tsp dried thyme
  • salt and pepper to taste
  • lemon
Instructions
  1. Preheat oven to 400°
  2. Mix the bread crumbs and parmesan cheese in a large bowl.
  3. Dip both sides of each filet in the mixture
  4. Set breaded filets in a greased shallow baking pan.
  5. Top each fillet with a pat of butter if desired.
  6. Bake in the oven for 15 minutes, then broil for a few more minutes to brown the crust.
