It’s a struggle to come up with new ideas for recipes sometimes. I didn’t want to duplicate somebody else’s idea for this Easter recipe project, but it can be difficult to be original sometimes. Pinterest usually helps to get my creative juices flowing, and that’s where I found tons of great recipes. As I was browsing, I thought about the yummy and fun dirt cake I made for Ryan’s first birthday party.
Then it came to me – I’ll make a layered dessert! I’m always drooling over the aestheticly pleasing mason jar desserts, so I figured I’d give it a shot. As a kid my very favorite Easter candies were Cadbury Creme Eggs. I still love them, I mean, it’s sugar after all! Whether they’re your thing or not, you have to admit that these are an iconic Easter candy. So there you have it – the evolution of my idea.
For each dessert you’ll need:
1 8-oz. mason jar
2 small chocolate cupcakes
1 C. white icing
Yellow food coloring
1 T. chocolate morsels
1 Cadbury Creme Egg
Divide icing into two portions. Add 4-5 drops yellow food coloring to 1/2 cup of the icing and set aside.
Place one small cupcake at the bottom of the mason jar and top with chocolate morsels.
Squeeze one layer of white icing on top of the cupcake using a pastry bag or a sandwich bag with the tip cut off.
Repeat with a layer of yellow icing, and then top with a second chocolate cupcake.
Pipe white icing on the outer edge of the top cupcake, and then fill in the middle with yellow icing.
Top with a whole Cadbury Creme Egg, and voila – dessert is ready!
Just like those yummy eggs, this is a very sweet dessert. If you’d like, you can use a short jar and do only one layer. Or you can just pop on the lid and save the rest for later!
