Our oldest child is getting less and less finicky with her food every year, and for that I grateful. She is starting to try new foods and eat or at least try what I make for the adults. My son is only five and still navigating his way through that picky eater stage. One food that the entire family likes to eat is pizza. I like to make my own from time to time, but between schoolwork, sports, scouts and family functions this time of year, I don’t have time to make it from scratch.
I love making this Italian Antipasto Salad with an easy freezer-pizza.
On our pizza night, I decided to make this delicious Italian Antipasto Salad.
Nothing pairs with pizza better than a crisp crunchy salad filled with our favorite veggies, meats and cheese. This is a hearty salad and so pretty too – I love the combination of colors almost as much as the flavors.
What’s great here is that you can pick and choose exactly what you want to add to your salad. You might opt for marinated mushrooms or olives or a different type of meat or cheese. Add what your family enjoys, and have fun creating your delicious antipasto salad.
- 1 romaine heart
- ½ cup chopped red onion
- ½ cup chopped grape tomatoes
- ½ cup chopped genoa salami
- ½ cup chopped provolone
- ½ cup peperoncini
- ½ cup marinated artichoke hearts
- oil & vinegar
- Chop the romaine heart well and add it to the serving bowl/dish.
- Arrange the remaining chopped ingredients in rows.
- Serve with oil and vinegar or your favorite dressing

Growing up my family had a pizza night every week. My Mom would have an antipasto salad on the table that was exactly like this one.

My kids love Tony’s pizzas and we keep them in the deep freezer all the time. I stock up on them whenever they’re on sale at my local grocer. Oh and salad is the perfect side to make it a full meal.
