Lasagna, salmon, stuffed peppers, turkey meatloaf, fajitas, tater tot cheeseburger casserole…these are a few of the regulars on our weekly dinner rotation this summer. It can get a little boring, so I try my best to find new recipes on pinterest, but then I have to shop for them. Wouldn’t it be nice if the ingredients and the instructions just appeared on your doorstep?
Indeed it was. I was so excited to find a Hello Fresh delivery at my door last week. Upon opening the larger box I found three smaller boxes organized into three kits. Each box contained the supplies required for each of the three meals along with the accompanying meat and fish all packed cold.
It was perfect timing too. I hadn’t taken anything out of the freezer for dinner on the day my box arrived, so I decided to dig in right away. Up first was Crispy Salmon with bok choy, wasabi lime dressing and soy infused rice. It was a bit labor intensive, to be quite honest. I found the directions to be a little out of order and if I were to make this again I’d work on making the dressing first before putting on the rice which ended up burning because I was busy with the dressing which required grated garlic and ginger which I’d never worked with before. I made a mess and dirtied a lot of items. However, the meal was delicious and I learned a few tricks (including the fact that I like bok choy!) that I didn’t know before. Lots of work but worth it in the end and that’s what it’s all about.
The next night, I made Pesto Chicken Skewers with tomato, cucumber and corn salad. This meal was very simple. It was fairly easy to make and delicious too. It’s a great summer meal which I plan to recreate. By the way…who knew you could could corn in the oven? Not me! The only problem I had with this meal was that my cucumber was half bad so I just used the half that was still edible.
Last night I made the Monterey Jack Burger with red onion marmalade and crispy zucchini fries. This one was quite delicious. I learned from the first recipe to read through the entire instructions first before deciding what to do first and that helped. The marmalade was so easy to make and it really made the meal; I will be making it again for our burgers! I liked the zuchinni too but nobody else cared for it. This meal was a little too light and had I known I would have taken out more meat for additional burgers. It could have also used an additional side to help round out the meal.
