We eat chicken for dinner twice per week or more. Chances are that you do too. According to the National Chicken Council, Americans ate an average of 84 pounds of chicken per person last year.
Now I have a few favorite recipes that I make each week which my family enjoys, but the same staples every week can also get pretty boring. Mostly I use either chicken thighs or thin-sliced breast for my dishes. For the most part I avoid whole chicken breasts or halves because I tend to overcook and dry them out.
After seeing the Parmesan Crusted Chicken recipe using Hellman’s, I picked up a jar at the grocery store and I’m ready to give a new chicken breasts another try. What the Hellman’s does for the recipe is seal in the moisture so you’re not left with dried out chicken.

BROKEN FIELD MEDITERRANEAN BAGUETTE
INGREDIENTS
Hellmann’s® or Best Foods® Real Mayonnaise
1 French baguette, halved lengthwise
Arugula or baby spinach leaves
Sliced plum tomatoes
Sliced fresh mozzarella cheese
Basil leaves
1/2 lb. thinly sliced prosciutto
Wish-Bone® Italian Dressing
DIRECTIONS
Squeeze Hellmann’s® or Best Foods® Real Mayonnaise generously onto baguette, then layer arugula, tomatoes, mozzarella, basil and prosciutto. Drizzle with Dressing.
I like to dip my base fillet in a mix of hellmans & 1 egg & pinch of dillweed before breading with lemon flavored fish fry & then fry!
