We eat chicken for dinner twice per week or more. Chances are that you do too. According to the National Chicken Council, Americans ate an average of 84 pounds of chicken per person last year.
Now I have a few favorite recipes that I make each week which my family enjoys, but the same staples every week can also get pretty boring. Mostly I use either chicken thighs or thin-sliced breast for my dishes. For the most part I avoid whole chicken breasts or halves because I tend to overcook and dry them out.
