Easy Chicken Stir Fry

- 1 lb thin-sliced chicken cut in crosswise large strips
- 1 small onion, thickly sliced
- 2 red bell peppers, cut in large chunks
- 1 large head broccoli
- 1 tablespoon olive oil
- 1 bouillon cube (chicken or beef)
- ⅔ cup hot water
- 1½ tablespoons soy sauce
- 1½ tablespoons cornstarch
- ¼ teaspoon ground ginger
- Heat oil in a wok or large saucepan.
- Cook chicken strips half way through before adding the vegetables.
- Meanwhile, dissolve the bouillon cube in the hot water, before adding the remaining ingredients for the sauce.
- Once the chicken and vegetables are cooked, add the sauce mixture.
- Stir well and act fast as the sauce will thicken rather quickly.
- Serve over white rice or noodles.
