  • 1 c all purpose flour
  • ½ c P.A.N. cornmeal
  • 3 T sugar
  • 1 stick salted butter, chopped into small pieces

  3. Place the dough into a pie plate and press to evenly cover bottom and sides.
  4. Once done, cover top of plate with aluminum foil, pressing to fit the dough closely. Fill with dried beans and bake in the oven for 30 minutes.
  5. Whisk an egg yolk and brush onto crust before returning to the oven for another few minutes.
  6. Remove crust from oven and cool completely.
  1. Add 2 cups strawberries to a saucepan and set aside the remaining 2 cups.
  2. Top with sugar, cornstarch, salt, vanilla and lemon juice and mash together with a potato masher. Saute until the mixture starts to boil, turn off heat and let cool.

  4. Spread into cooled pie crust and refrigerate for a few hours.
  5. Top with fresh whipped cream.
