Easy Chicken Stir Fry Recipe (1sp)

By Heather

Easy Chicken Stir-Fry - no obscure ingredients!

I’m easily intimidated by stir-fry recipes, and all of the special ingredients they normally require like fresh ginger or sesame oil, so when I came across a recipe for a simple sauce, I figured I’d give it a shot.

It turned out to be fabulous, for a fraction of the cost if I’d ordered in, and healthy.

My husband liked it so much that he asked me to put it on the weekly dinner rotation.

Since first I shared this recipe, I’ve been getting tons of emails about what kinds of kitchen tools I use when stir-frying meats, fish and vegetables. I use a basic wok similar to this T-Fal wok, and I use wooden spoons while cooking. As for the soy sauce I recommend Kikkoman Lite Soy Sauce, as it’s lower in sodium. We use the same soy for sushi.

Ingredients
  • 1 lb thin-sliced chicken cut in crosswise large strips
  • 1 small onion, thickly sliced
  • 2 red bell peppers, cut in large chunks
  • 1 large head broccoli
  • 1 tablespoon olive oil

  • 1½ tablespoons soy sauce
  • 1½ tablespoons cornstarch
  • ¼ teaspoon ground ginger
Instructions
    1. Heat oil in a wok or large saucepan.

    3. Meanwhile, dissolve the bouillon cube in the hot water, before adding the remaining ingredients for the sauce.
    4. Once the chicken and vegetables are cooked, add the sauce mixture.
    5. Stir well and act fast as the sauce will thicken rather quickly.
    6. Serve over white rice or noodles.
