Country Crock Veggie Shopping Kit and $25 Gift Card (Review & Giveaway)

If there’s one area I fall short on when preparing meals, it’s with the veggie portion. I tend to focus most on the main meal, and since both my daughter and husband are reluctant to eat the steamed veggies I enjoy, I have to get a little more creative than steamed broccoli or green beans.

In my veggie shopping kit from Country Crock, I found a recipe card that appealed to me for Roasted Cauliflower. With only six ingredients, it was simple and straightforward but I knew by the ingredients listed that it was going to come out tasty.

This was the perfect side dish for my chicken piccata the other night, since the two dishes had our favorite ingredient in common: lemon juice. My husband – who usually leaves the veggies for me to put away, gobbled up every last cauliflower floret. I’m definitely adding this dish to my list of easy, healthy sides.

As for Emma, she’s not going to eat veggies for me any time soon, but that doesn’t mean I don’t try each time I make them. I know that a great way to help kids try new foods is to involve them in the cooking process, and I was excited to see the kid-friendly veggie scrubber and the veggie peeler in the kit. I think we’ll try peeling potatoes or carrots next. Keep your fingers crossed that she eats them!
