I dread paying the bills each month. Seeing that dollar amount due gives me anxiety, and the credit card we use for groceries is especially dreadful. When did sustenance become so expensive? Thanks to rollback savings on Kraft products at Walmart, I was able to feed my family for well under twenty dollars, with enough leftovers for lunch tomorrow. Low budget meals are the best any time but especially during tight budget times like the 1st and 15th of the month. These Chilled Barbecue Chicken Salad Sandwiches may be low budget but they are high on taste.
When the weather is warm, we like to avoid turning on the oven. It’s either the grill or crock-pot for dinner prep. I also love using the crock-pot in summer because it gives us more time to do all the fun things.
This dinner (or lunch) is perfect for a hot summer day because it’s served cold. You can either serve it alongside salad greens, or make sandwiches like we did. I selected Miracle Whip as one of the ingredients because it’s a great better-for-you alternative to mayonnaise.
We paired our sandwiches with VELVEETA Shells & Cheese Dinner Cups. I couldn’t find the original version at our store, so I picked up the cups and I have to say, it was much easier than boiling over the stove. And also, no dirty pans. Hooray!
