Enchilada Casserole

By Heather

We have Mexican food for dinner at least once per week, sometimes more. Some recipes are more intensive than others but my favorites are the one dish meals. When we want low carb, I go for the Tex Mex Stuffed Peppers or Chicken Fajita Cauliflower Rice Bowls. I love making enchiladas but I found a far better and easier way to make them with this enchilada casserole. I based it loosely on my Mexican Lasagna that is also very delicious. For this recipe I decided to use corn tortillas because ... read more

Pink Grapefruit-Walnut Detox Smoothie

Pink Grapefruit-Walnut Smoothie

If you follow me on instagram or if you know me in real life, you know that I drink a lot of smoothies. They're a great way to make sure I get all of my daily fruits and veggies in, and they're also quick and delicious. But I've gotten into a bit of a smoothie rut. I tend to make the same combo over and over: greens, carrots, strawberries and banana. It's getting old. I noticed everyone else in my house suddenly losing interest in my smoothies as well, so I guess I wasn't the only one feeling ... read more

How to Start Composting: An Easy Way to Go Green

How to start composting

Last weekend, Kevin and I finally finished putting together our compost tumbler.  About 6 weeks ago I found an amazing deal on it at Costco for only $99, very similar to this one.  I was so excited, since I’ve been wanting one for years now. I'm going to tell you exactly how to start composting for your own family - it's so easy! Isn’t she purty? Why compost? There are so many reasons.  For one, it’ll save you money by making your own nutrient-rich soil that your plants will love.  But more ... read more

Easter Bunny Chow

By Heather

It's hard to believe that Easter is just around the corner. Which means that we are already working on our Easter snacking. A few months ago I made this Salty & Sweet Snack Mix which we love, but lately we are craving something a bit sweeter. I decided to make Easter Bunny Chow using Chex™ cereal and a few other goodies. There were several varieties in my store include rice and corn but I went with the Gluten Free Chocolate Chex™. I figured we'd be adding chocolate to the cereal anyway, ... read more

Canvas Print for Game Room

We made our big move to Florida a little over a year ago and have been in our house for about five months. While we're happy to be here, it doesn't quite feel like home yet. It takes quite a bit of time - and trial and error to get your house feeling like home. It's a process, and I am pleased with our new framed art from CanvasDiscount.com. My son received a gaming desk as an early Christmas present a few months ago. He was so happy to have a desk to match the gaming chair he got for ... read more

Last minute snacks for the big game

By Heather

Next Sunday will be the last official game of the season. I will watch a little, but mostly I'm just there for the snacks and commercials. What about you, and who are you rooting for? Having nachos on deck is an absolute must for the ultimate game viewing experience, so why not make it good for your gut too? Prepare this drool-worthy snack following the Gut Friendly Nachos recipe from pgs. 39 - 41 of the online Small Town Cookbook. Small Town Cultures' gourmet plant-based probiotics are ... read more

DIY Crayon Heart Classroom Valentines

By Heather

For some reason, I can't stand crayons that aren't perfect. We had a box full of broken, unwrapped, sample-sized and other misfit crayons and I wanted no part of them. They had to go, I hated them. But I loved the idea of making something new, useful even from these throw-aways. Make studs out of these duds! I've seen countless pins on pinterest on how to make heart-shaped crayons using your own sliced-and-diced bits and pieces. This is what worked for me. I found this Wilton Ruffled 6 ... read more
