IMG_4767

I've become a bit of a pinterest addict lately, and most of my pinnings have to do with food, naturally.  There are so many great recipes to be found and among my favorites is this Buttermilk-Blueberry Breakfast Cake. The recipe calls for fresh blueberries, but I still have a stash of frozen blueberries from last summer that I need to use up. (We live near the blueberry capital of the world, ya know.)  I'm not sure why I filed this under the dessert category, because this really is a cake to … [Read more...]

Crockpot Recipe: Spinach and Chicken Lasagna

spinach-chicken-lasagna

I initally made this recipe in 2005 when my husband and I hosted our first Christmas gathering as a married couple.  It was a large crowd, since we invited both of our families to celebrate the holiday, and I had no idea how I was going to feed everyone with only one oven. Since this meal is made in a crockpot, it was the perfect fit for the second entree.  I had my doubts on how this would turn out (lasagna in a crockpot?? huh?), but it was a huge hit.  I made it for dinner last week and … [Read more...]

Easy Chicken Stir Fry #Recipe

I'm easily intimidated by stir-fry recipes, and all of the special ingredients they normally require like fresh ginger or sesame oil, so when I came across a recipe for a simple sauce, I figured I'd give it a shot. It turned out to be fabulous, for a fraction of the cost if I'd ordered in, and healthy. My husband liked it so much that he asked me to put it on the weekly dinner rotation.
